Crunchy papdi, soft wada (bhalla), spicy green chutney and sweet tangy tamarind chutney makes this dish filled with flavors an colors! Have everything ready and assemble just before serving! Grind urad dal, green chilies and ginger using very little water. (Make sure batter is thick)
Add hing, salt and cumin seeds to the wada batter. Whisk batter with a beater for 2-3 minutes.
Deep fry wadas in oil on medium heat.
Soak wadas in water and leave it for an hour.
Squeeze wadas to remove extra water before using.
Whisk yogurt, add sugar and keep aside.
In a serving flat dish arrange papdi, add bhalla over the papdi. Pour some yogurt (dahi) as well.
Next drizzle green chutney, tamarind chutney around each papdi.
Finally sprinkle cumin powder, chaat masala and sev. The chaat is ready to be served! Enjoy as an appetizer or a snack.
