Brush oil on eggplant, tomatoes and garlic. Make slits on eggplant and tomatoes.
Bake at 425 F.
Garlic will take around 12-15 minutes.
Eggplant and tomatoes will take around 40-50 minutes.
Check in between and keep on rotating the vegetables.
Remove the skin from the eggplant and mash with a fork.
Roughly chop garlic and tomatoes.
In a skillet add oil, then add finely chopped onions. Let it cook for 4-5 minutes till it becomes soft then add garlic and cook for a minute.
Then add tomatoes and cook for next 2-3 minutes.
Now add all the dry spices and salt to taste. Sauté everything for next 1-2 minutes.
Lastly add mashed eggplant, mix everything and cook for 2-3 minutes.
Thaw pastry sheet according to package instructions.
Cut the sheet in 2 inch cubes.
Line each pastry cube in a greased cupcake tin and add roughly 1/2 tbsp prepared smoked aubergine AKA baigan bharta on top.
Bake at 400 f for 15-20 minutes.
Once out serve with your choice of dip. I served it with mint cucumber raita.
