Smoked Aubergine Puff Bites

Smoked Aubergine Puff Bites AKA Baingan Bharta Puff Bites. Baingan bharta adds burts of flavors to the flaky, buttery soft puff pastry and will make them irresistible. Pop a few of these on your mouth and enjoy! If you make this recipe please share pictures with me @foodstoriesbytwisha

Ingredients

Method

Roasting Vegetables:

1.

Brush oil on eggplant, tomatoes and garlic. Make slits on eggplant and tomatoes.

2.

Bake at 425 F.

3.

Garlic will take around 12-15 minutes.

4.

Eggplant and tomatoes will take around 40-50 minutes.

5.

Check in between and keep on rotating the vegetables.

Baigan Bharta:

1.

Remove the skin from the eggplant and mash with a fork.

2.

Roughly chop garlic and tomatoes.

3.

In a skillet add oil, then add finely chopped onions. Let it cook for 4-5 minutes till it becomes soft then add garlic and cook for a minute.

4.

Then add tomatoes and cook for next 2-3 minutes.

5.

Now add all the dry spices and salt to taste. Sauté everything for next 1-2 minutes.

6.

Lastly add mashed eggplant, mix everything and cook for 2-3 minutes.

Puff Pastry Bites:

1.

Thaw pastry sheet according to package instructions.

2.

Cut the sheet in 2 inch cubes.

3.

Line each pastry cube in a greased cupcake tin and add roughly 1/2 tbsp prepared smoked aubergine AKA baigan bharta on top.

4.

Bake at 400 f for 15-20 minutes.

5.

Once out serve with your choice of dip. I served it with mint cucumber raita.
