This delicious Mexican inspired casserole is prepared in one pan no cooking required! Just add beans, corn, sauce and spices, arrange tater tots and bake. Crunchy tater tots along with saucy Mexican beans and corn is just the perfect combination! This can be pre made and kept ready, just bake it prior to your guests arrive. In a large tray add corn, black beans, enchilada sauce, seasonings, half cheese and mix everything.
Now arrange tater tots on top. Add remaining cheese and bake at 400 F for 20-25 minutes.
Garnish with green onions and serve.
