It’s healthy eating in our house today! Quinoa is one of my most liked ingredient when it comes to healthy eating. It is one of the few plant based food that is high in protein and not to forget quinoa is rich in fiber which will help you keep full for a long time. Whip up a quick dipping sauce to go along with these patties. If you have never tried quinoa before these protein filled patties would definitely be a great choice! Enjoy as a snack or have if for dinner with a hot bowl if soup! We ate it with jalapeño mayo sauce. Recipe for that is in my older post!
Mix all the ingredients together.
Form into patties and shallow fry in both sides till they turn nice and crispy.
1. Add quinoa to boiling water and cook for 10 to 12 minutes. Cover and let it cool.
2. I wanted to make this recipe healthy so I have used minimal binding ingredients (bread crumbs and potatoes), so you might feel that the patties are breaking while eating. Feel free to add more binding ingredients.
3. You can use any green leafy vegetables you have in hand.
