I start my week with eating healthy, so that by the end of the week I can indulge in some yummy junk food! Today’s recipe is lettuce wraps. Crispy green lettuce filled with flavorful tofu mixture, topped with a nice creamy avocado sauce and peanuts for a nice crunch.
Heat oil in a pan and cook tofu till it is crisp. Transfer it to a bowl.
In the same pan sauté onions, bell pepper and corn for 2-3 minutes.
Lastly add sauces, cook for 30 secs and mix in tofu.
Take lettuce leaves, add the tofu mixture, top with avocado sauce and peanuts to give it a nice crunch.
