Do you like Mexican food? Do you like trying something new? If you answered yes, this recipe is for you. These Vegetarian Bean Taquitos are crispy, crunchy and incredibly delicious. Taquitos can either be baked or fried for a super fast appetizer or dinner. For the filling I have used beans seasoned with red chili powder, cumin powder, mexican seasoning and garlic. Fill the tortillas, roll them and bake or fry them until golden brown and crispy. Eat then right away or serve with some pico de gallo and avocado crema. Lay tortilla on a plate. Add 2-3 tbsp of beans and cheese.
Roll the tortilla and place the seam side down.
Heat enough oil in a heavy bottom pan for shallow frying. Place the rolled tortilla with seam side down. Shallow fry each side until golden brown.
Pre Heat oven at 425 F.
Line a baking sheet with parchment paper. Lay down rolled tortillas.
Lightly brush the tortillas with oil and bake for 10-12 min till tortillas are crispy.
Lay taquitos on a plate. Top with some pico de gallo, avocado crema and lettuce. Dig in!
