An Indian twist to a Mexican favorite, these quesadilla are made with paneer, chopped vegetables and lots of spices in a paratha. Make as a quick week day meal or a snack for kids when they return from school. This recipe can get as ‘desi’ as it can! Made with paneer, Indian spices and left over roti or paratha. Heat oil in a pan, add garlic and sauté.
Then add onions, bell pepper and tomatoes.
Add spices, mix and cook till vegetables are soft.
Add paneer, salt and give everything a good mix. Keep aside.
Take one paratha, spread green chutney.
Add 2 tbsp paneer mixture and cheese.
Apply tomato ketchup on another paratha and lay it over the stuffing.
On a heated skillet, using some oil grill the quesadilla on medium heat till crispy and golden on both sides.
Cut into pieces and serve with chutney and ketchup.
