Cook sweet potatoes using 1 tbsp oil. Cook until 80 % done.
To the same pan add sauté onions and bell pepper.
Add all spices,salt, rice, and 1/2 cup enchilada sauce. Mix everything and cook for couple minutes.
Place 2 tbsp of filling on a tortilla.
Gently roll the tortilla. Repeat with all tortillas.
In a baking pan pour some enchilada sauce, place all the rolled tortillas. Top with some more enchilada sauce, sprinkle some cheese.
Bake at 350 F for 7-8 minutes.
Let it cool for 5 minutes and serve!
