Sweet Potato Black Beans Enchilada

Super easy, delicious and filling enchiladas. Roasted sweet potatoes with black beans and enchilada sauce wrapped in a tortilla is definitely be a good idea for weekday dinner! You can’t go wrong with this enchilada recipe! Tag us @foodstoriesbytwisha if you recreate this recipe

Ingredients

Method

Filling

1.

Cook sweet potatoes using 1 tbsp oil. Cook until 80 % done.

2.

To the same pan add sauté onions and bell pepper.

3.

Add all spices,salt, rice, and 1/2 cup enchilada sauce. Mix everything and cook for couple minutes.

Assembly

1.

Place 2 tbsp of filling on a tortilla.

2.

Gently roll the tortilla. Repeat with all tortillas.

Baking

1.

In a baking pan pour some enchilada sauce, place all the rolled tortillas. Top with some more enchilada sauce, sprinkle some cheese.

2.

Bake at 350 F for 7-8 minutes.

3.

Let it cool for 5 minutes and serve!
