Vegetarian chili bean soup is a perfect quick and easy dinner idea for a busy week! Loaded with veggies, beans and quinoa this soup is flavorful and filling!!
SauteĢ onions, bell pepper and garlic in 1 tsp oil for 1-2 minutes.
Next add carrots, tomatoes,corn, beans and 1/2 cup water. Cover and cook for 2-3 more minutes.
Now add all spices, salt and sauce. Let the spices cook for another minute.
Lastly add quinoa and 2-3 cups of water. Cover and cook for 5-7 minutes.
