HAPPY 4th of JULY!! I always need a reason to bake and here I am again! Baked a super moist tres leches cake for America’s Independence Day! This scrumptious mexican cake drenched in three different milk and topped with whipped cream is delicious, yummy, creamy and whatever you can think of. The cake is so soft, it just melts in your mouth! This classic mexican cake is definitely a show stopper for your next gathering!!
Mix milk and vinegar. Keep aside for 10 minutes. Buttermilk is ready.
Combine all dry ingredients- sift flour, baking soda, baking powder, salt.
Combine all wet ingredients- buttermilk, oil, yogurt and sugar in a bowl.
Slowly add the dry ingredients to the wet ingredients and make a smooth lump free batter.
Transfer the batter to a greased and dusted cake pan. Tap to remove bubbles.
Bake at 180 C (355 F) for 20-25 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
Let the cake cool to room temperature.
Prick the whole cake using a fork.
Slowly pour three milk mixture over the cake.
Let the cake sit for an hour or so, all the milk will get absorbed by cake slowly.
Lastly add whipped cream over the cake and top with strawberries!
1. This recipe will serve around 8-9 people.
2. Simply double the recipe if serving for 20 people.
