The cake is lightly flavored with rose and crushed pistachios and then topped with a beautiful rose glaze. This perfect rose pistachio cake is made with all purpose flour, crushed pistachios, perfumed with rose water and decorated with pistachios and dried rose. It can’t get any better than this, can it? Overall the cake is very moist with delicate flavors. The cake itself is not too sweet and so the rose glaze balances off the sweetness.
Mix all the ingredients and make a smooth paste. Add in more milk if needed, making sure not to add too much or else the glaze will be runny.
Mix milk and vinegar. Keep aside for 10 minutes. Buttermilk is ready.
Combine all dry ingredients- sift flour, baking soda, baking powder, salt.
Combine all wet ingredients- buttermilk, oil, yogurt and sugar in a bowl.
Slowly add the dry ingredients (including pistachios) to the wet ingredients and make a smooth lump free batter.
Transfer the batter to a greased and dusted cake pan. Tap to remove bubbles.
Bake at 180 C (355 F) for 30-35 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
Let the cake cool for 10-15 minutes.
Once cool, run a knife around and demould the cake.
Drizzle the prepared rose glaze over.
Garnish with dried rose petals and chopped pistachios. (Optional)
