This is again one of my nostalgic recipes! I used to cook this recipe in my college days. Fried potato fingers tossed in spicy Szechuan Sauce will definitely be on your list for a quick snack or appetizer. This recipe is made with simple ingredients from the kitchen. Combine them together, add the sauces and you are done! For this recipe I made my quick Szechuan Sauce by just blending the ingredients. But feel free to use the store bought one!
Deep fry potatoes and keep aside.
Take dry red chili, garlic and add 1 tbsp water. Grind to a fine paste.
Heat oil in a wok, then add ginger garlic green chili paste and sauté for 30 seconds.
Sauté onions and bell pepper for a minute.
Add all the sauces along with the Szechuan Sauce.
Add 1/2 cup of water. Let it boil.
Once boiled add cornstarch water slurry and cook for another minute.
Lastly add fried potato fingers and mix. Enjoy hot!
