Heat 1/4 cup milk and add cashews. Keep aside.
In a heavy bottom pot add 2 cups of milk and sugar. Let it boil for 7-8 minutes. Remove from heat and let it cool to room temperature.
Now in a mixing bowl add heavy cream and wisk it with a beater till cream becomes frothy.
Add frothy cream to cooled milk. Add gulkand (rose jam), 2 drops of red food coloring.
Pour this mixture in a metal or freezer safe container.
Let it set for 2-3 hours.Stir the mixture using a spoon. Then add cashews, mix everything again and let it set for 7-8 hours or overnight.
Rose Icecream is ready. Serve chilled.
