Pressure cook chole with 2 tea bags for 5-6 whistles.
Heat oil in a pan, add cloves, cinnamon and cumin seeds. Sauté for 30 seconds.
Then add onions, ginger garlic paste and cook till pink and translucent.
Add all dry spices, cook for 1-2 minutes.
Then add tomato purée, cook till oil separates.
Next add boiled chole, 1/2 cup of water and cook for 2-3 minutes.
Lastly heat ghee in a small pan, add red chili powder and garam masala.
Add the tadka to chole, mix and cook for 2 more minutes. Serve with bhatura, roti or naan.
1. Adding tea bags will give nice restaurant style dark color to the chole.
2. If you don’t have tea bags, boil tea and strain it. Add tea water to the pressure cooker while boiling chole. It will give the dark color to chole.
