Mexican paratha with Avocado raita! Our Sunday dinner! Made some parathas today, but with a fusion twist! Mexican paratha. Used some refried beans, top with veggies and paratha is ready! Serve with some homemade avocado raita!
Roll out the paratha.
Spread 2 tbsp refried beans, onions, bell pepper, corn and sprinkle some cheese over half side of the paratha.
Fold the paratha and seal the edges with a fork.
Transfer the paratha on to a skillet and cook evenly on both sides using 1 tsp oil.
1. I used multigrain flour, feel free to use wheat or all purpose flour.
