Mexican rice is light, fluffy and full of wonderful flavors. I of course added a little desi touch to this delicious rice. This easy Mexican rice is so simple to make, and is a great addition to any Mexican meal. Spicy with nutty flavor from beans and lots of cilantro makes this rice so tasty! It is great and best way to use left over rice!
Heat oil in a wok, sauté garlic for 30 seconds.
Then throw in onions, bell pepper, black beans, corn, all the seasonings and salt. Cook everything for 2-3 minutes.
Add rice, cook for another minute and garnish with cilantro.
