Mexican lasagna is a fun and unique twist to the classic Italian lasagna. This delicious dish is layers of tortillas with beans, cheese and hot salsa, all baked till golden brown. This simple Mexican fusion is definitely a crowd pleaser! Do give it a try!
Lightly grease an oven safe pan and pre heat oven at 350 F.
Layer tortillas to fit the pan.
Spread 1/2 salsa, 1/2refried beans, 1/2onions, bell pepper, 1/3 cheese.
Repeat the layers, end with tortilla on the top.
Lastly layer with cheese and tomatoes.
Cover and bake for 10 minutes, then uncover and bake for another 5-7 minutes.
Let it stand for 10-12 minutes. Cut into pieces and serve.
