Made these really quick, easy and non fried malpua few weeks ago for Janmashtami. I was very busy the whole day, but wanted to make something really quick yet festive! So thought of making these instant malpua! This is my shortcut recipe and perfect when I am running out of time. Heavy cream gives it the richness and a pinch of baking soda makes it fluffy and spongy.
In a bowl mix all purpose flour, baking soda and cream. Make a lump free batter and rest for 15-30 minutes
Make one string sugar syrup by boiling water and sugar. Add a pinch of saffron and cardamom powder.
In a pan shallow fry malpua in ghee and cook on both sides.
Dip into sugar syrup for 10-15 seconds, top with chopped nuts and serve!
1. Serve immediately, otherwise the malpuas will become chewy.
