It’s weekend! Time to indulge in some dessert!! Chocolate in cakes are overrated! Try something new over the weekend for dessert. This zesty lime cake is what you are looking for this hot summer season. Every bite of this fluffy, tangy cake is bursting with lime flavor and very easy to bake from scratch. It takes around 15 minutes to get the cake ready to bake! This recipe is inspired by Arunima Bakes.
Add lime juice to 1 cup of milk. Keep aside for 10 minutes. Buttermilk is ready.
To the buttermilk add oil, sugar and lemon zest.
Sift flour, baking soda, baking powder, salt and then add to the buttermilk mixture. Mix all ingredients to form a smooth batter.
Transfer the batter to a greased and well dusted 8 inch loaf pan.
Bake at 180 C (355 F) for 30-35 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
Let the cake cool for 10-15 minutes.
Once cool, run a knife around and demould the cake.
Drizzle the lime frosting over. Enjoy the cake!
1. For getting lime zest, grate lime over a small grater till you see white color. Don’t grate white color, it tastes bitter.
2. Every oven is different, so check in between not to over bake the cake.
