Bean and fajita quesadilla. Perfect for a quick lunch or dinner! These quesadillas are super easy to make and uses minimal ingredients. It is perfect make ahead recipe for a big gathering. Assemble all the quesadillas and keep them ready. Simply cook on a skillet and serve when guest arrive! Serve these quesadillas with a side of fresh salsa or a spicy mayo-jalapeño sauce.
Heat 1 tsp oil in a pan, add chopped onions, bell pepper, salt and cook until soft.
Then add boiled beans, all spices and cook for 1-2 minutes.
Refried beans is ready. Keep aside.
In a skillet heat 1 tbsp oil, add sliced onions, bell pepper, garlic and salt.
Sauté for 2-3 minutes and then add red crushed pepper.
Fajita is ready. Keep aside.
Take one tortilla, add refried beans, fajitas and cheese.
Top with another tortilla.
