Who said khichdi is boring and is to be made only when you are sick. This khichdi is a meal in itself. It has rice and lentils along with a lot of healthy vegetables. Unlike the normal khichdi, rajwadi khichdi is not made in a pressure cooker instead it is made in an open pot, and this is what makes the khichdi taste different than our everyday khichdi! This is again my mother in law’s recipe and is a favorite in our family and with our friends! Enjoy this recipe with chaas (buttermilk), papad and salad!
Heat a tbsp of oil in a large open pot.
Add toordal and 2-3 cups of water along with turmeric powder.
Cook the dal till it is 90% boiled. This will take around 15-20 minutes.
Then add all the veggies, ginger garlic paste, rice and salt. Add water if needed.
Cover the pot and cook for few minutes.
Keep stirring in between to prevent khichdi from sticking to the bottom.
Prepare the tempering. Add oil in a small pan, once oil heats up add mustard seeds and khichdi masala.
Pour the tempering and nuts(optional) on the khichdi and mix everything for 4-5 more minutes.
Serve hot!
1. Soak toor dal for atleast 2-3 hours. Otherwise it will take very long for the toor dal to cook.
