One pot meals are my favorite! Especially on busy weekdays! This one pot recipe is not just quick but also super healthy and protein packed! It requires minimal ingredients, yet tastes delicious! Eat it along with rice/roti and pickle.
In a cooker add oil, cumin seeds, sauté for 30 seconds.
Add onions, tomatoes and sauté for a minute.
Next add all the masalas, salt, moong dal and cook for 4-5 whistles.
Once cooked add water and chopped palak, mix everything and serve!
