Do you have lot of vegetables in your fridge about to go bad? Or do you want to make your kids eat vegetables!? Try making this recipe! It has all the flavors from the masalas (spices) and a nice creamy texture from the peanut paste. It does not require a lot of preparation and is made with our regular masalas. Enjoy this with roti, paratha, naan or rice.
In a pan add oil and cumin seeds, wait for 30 seconds and then add onions. Cook till onions are soft.
Then add the green paste and cook for a minute.
Next add in the white paste and cook for another minute.
Add all other vegetables and mix.
Add the dry spices, salt, 1/2 cup of water. Cover and cook for 4-5 minutes.
Stir in between. Add water if required to adjust the consistency.
In a blender add 1/4 cup water, 3 green chilies, 2 cloves of garlic, 1 inch ginger and blend to a smooth paste.
In a blender add 1/2 cup water, 1/3 cup peanuts, 1/3 cup fresh coconut and blend to a smooth paste.
