Today I am sharing the recipe of my all time favorite dish ‘Pav Bhaji’ but with a little twist. It is a nice amalgamation of vegetables and spices. The key here is to cut all vegetables into bite sized pieces instead of mashing everything, so that you can get the taste of each vegetable cooked in the aromatic spices. Follow my recipe as this Bhaji is cooked in a little different method than the traditional Bhaji. Hope you all like the recipe.
Take 2 tbsp butter in a flat pan add chopped onions and sauté for few seconds.
Then add bell peppers, peas, eggplant and potatoes and sauté again till all the vegetables are soft.
Now throw in the tomatoes and cook.
Add 1 tbsp oil and add red chili paste, cook for 10-15 seconds and mix everything together. Add pav bhaji masala, red chili powder and salt.
Cook everything for 3-4 minutes and serve with pav (dinner roll).
Soak dry red chilies in 1 cup warm water for 30 minutes.
Put the soaked red chilies, garlic, half tomato, 1/2 cup water and grind to a fine paste.
