Dhaba style food always fascinates me! Here I present one dhaba style recipe Baigan ka Bharta. What I do different while making this dish is that I roast the tomatoes and garlic too! Baigan bharta is made from simple regular masalas but the charred garlic and tomatoes makes all the difference in this recipe! It gives the recipe the rustic dhaba flavor. Do try this recipe. The burnt taste and aroma from charred tomatoes and garlic will take baigan bharta to another level!
In a skillet add oil, cumin seeds. Once it crackles add finely chopped onions. Let it cook for 4-5 minutes till it becomes soft.
Now add garlic.
Then add tomatoes and cook for next 2-3 minutes.
Add all the dry spices and salt to taste. Sauté everything for next 1-2 minutes.
Lastly add mashed eggplant, mix everything and cook for 2-3 minutes.
Serve with roti or paratha!
Brush oil on eggplant, tomatoes and garlic. Make slits on eggplant and tomatoes.
Pre heat owen at 425 F and bake.
Garlic will take around 8-10 minutes.
Eggplant and tomatoes will take around 40-50 minutes.
Check in between and keep on rotating the vegetables.
Remove the skin from the eggplant and mash with a fork.
Roughly chop garlic and tomatoes.
