Sev Khamni is a very popular breakfast from Surat in Gujarat. Living in USA for quite some years now I crave Sev Khamni a lot and so decided to master the technique to get the same taste as the store bought one. I tried a few times and now I think have the perfect recipe. Sev Khamni is different than Sev Khaman. Sev khaman is cut into pieces(like dhokla) and served with sev. Where as khamni is crumbled khaman which is again cooked with garlic and green chilies to enhance more flavor. It needs a little preparation but the cooking time is less than 10 minutes!
Drain all the water from chana dal and roughly grind soaked Chana dal. (Don’t make a very smooth paste). Add only around 2-3 tbsp of water if required. *Very important*Do not make this batter thin.
Add 1 tbsp garlic and green chili paste, salt, 1 tsp eno and mix everything for 3-4 minutes until the batter is light and fluffy.
Steam this batter in a steamer for 20 minutes. Switch off the stove and let it stand in the steamer for 10 more minutes. Now our khaman is ready.
Once khaman comes to room temperature crumble it with your hands.
In a kadhai add oil, mustard seeds, hing, garlic green chili paste and cook for 30 seconds.
Now add 1/2 cup water and sugar. Cook until sugar is dissolved.
Next add in the crumbled khaman and mix everything really well. Squeeze a little lemon over it.
Garnish with cilantro, sev and freshly fried green chilies.
