Hands down this is the best eggless hash brown recipe I have made! These hash browns are crispy from outside and tender from inside. I added finely chopped onions and green chilies to give that spicy kick, but this is totally optional. This is a vegan recipe, I have added no eggs to this recipe! No deep frying needed, I baked mine in the oven, but you can also do it on a stove too. This recipe is so quick, will be ready in 30 minutes.
In a mixing bowl add potatoes, green chilies, white part of green onions (finely chopped), black pepper powder and salt.
Bring everything together and form like a dough.
Take small portion of the mixture and make small patties. This mixture will make around 12, 4 inches patties.
Lay them on a greased baking sheet or a greased skillet.
Pre heat the oven at 425 F and bake for 15 minutes, flip at this time and bake for 5-7 more minutes.
Sprinkle some fresh green onions and serve!
