Fried Avocado Tacos

It’s Cinco de Mayo today! Me and my husband love Mexican food and every year we make sure we go to a Mexican restaurant on this day!! This year we celebrated it at home. I made a Mexican spread with margaritas, chips salsa and some tacos. If you love avocados like me, you should definitely try this fried avocado tacos! The creamy texture from the avocados and the spicy green jalapeño-mayo sauce along with fresh cilantro makes these tacos really delicious!

Cook: 60 mins
Yields: 6 Servings

Ingredients

Method

Fried Avocado

1.

Cut avocado in slices.

2.

Dip in cornstarch, all purpose flour slurry and bread crumbs.

3.

Shallow fry in pan for 30 seconds to a minute.

Tacos Assembly

1.

Place fried avocado on a warm tortilla.

2.

Top it with shredded cabbage, thinly sliced onions, cilantro and lastly drizzle Jalapeño-Cilantro Mayo Sauce.

3.

Squeeze fresh lime before eating.

Notes

1. Adding cheese is optional.

2. You can also add fresh salsa on the tacos.

3. This is not an authentic Mexican recipe. I have adjusted the recipe according to my taste.
