Ringan na Ravaiya is a traditional Gujarati food where baby eggplant ma are stuffed with peanut mixture with garlic and spices. This is my favorite Gujarati meal of all time. It is so easy to cook with just few ingredients from the kitchen. The peanut curry is so delicious with lots of flavors from local spices. It is low in carbohydrate and has tons of nutrition. It tastes best with khichdi and chaas but you can also eat it with roti or paratha!
In a food processor add garlic, peanuts and cumins seeds. Roughly crush them. Do not make a paste.
Transfer crushed peanuts to a bowl, add all spices, salt, 1 tbsp oil and mix everything well so that everything is well combined. Add 1 tbsp water if needed.
Slit eggplants half way. Stuff them with the peanut mixture.
In a pressure cooker add some oil, stuffed eggplants and water. Add remaining peanut mixture and 3/4 cup water. Mix and cook for 2 whistles.
Let the cooker release pressure on its own. And serve with khichdi and chaas.
