Start by making a soft dough. Mix all the above ingredients in a bowl and keep aside.
Take small portion of the dough, make golf size balls.
Flatten the ball and place mozzarella piece in the middle.
Cover the ball and smooth it out.
Make a thin slurry using maida, cornstarch, salt and water.
Dip the prepared ball in the slurry, coat with bread crumbs and keep aside. Repeat for all balls.
Fry on medium heat till golden brown in color.
1. You can repeat the coating process twice for more crisper cheese balls.
2. Boil potatoes 5-6 hours in advance for better results.
