Nargisi Aloo

Nargisi Aloo is an awesome dish which will be perfect for your party table. This delicious, elegant dish goes well with roti, naan, paratha or rice. The gravy for Nargisi Aloo is made from onion and very basic and usual spices. This gray is smooth, creamy and rich. The star for this recipe are the paneer-potato stuffed baby potatoes, they taste fantastic! The crispy deep fried potatoes with soft rich paneer stuffing makes it simply yummy. The stuffed potatoes themselves are so tasty they taste great even without the curry. Serve them with chutney or ketchup and there goes your appetizer!

Method

Stuffed Potatoes

1.

Boil baby potatoes, peel and cut them in half.

Now carefully using a spoon scoop the middle part of potatoes and make like a potato boat. (See pictures at the end of recipe)

Reserve scooped potatoes in a bowl, add shredded paneer, black pepper powder, turmeric powder and salt. Mix everything and keep aside.

Now on medium heat, fry potato boats we made previously till golden brown in all sides.

Let them cool down and stuff them with paneer-potato stuffing.

Gravy

1.

Add oil in a pan, once heated add roughly chopped onions and cook till they are soft.

2.

Transfer to a blender and make a paste.

3.

In the same pan add oil, then add ginger garlic paste and sauté, next add the prepared onion paste and cook to 2-4 minutes.

4.

Then add red chili powder, garam masala, salt and cook till oil separates out.

5.

Add 1/2 cup of water, peas and tomatoes. Mix everything and simmer for another minute or two.

6.

Add chopped cilantro, prepared stuffed potatoes and serve with paratha or roti!
